50th Anniversary Celebration – Big congratulations to everyone who won!

 

Our 50th Anniversary Celebration in July has finished on a high note, with hundreds of great product deals, over 100k prizes including a car, it is an epic celebration loved by many.

2021 Pie Awards

Let this vibrant red brighten your day.

 

Enjoy a simple hummus without tahini, it is refreshing, packed with feel-good vitamins and makes you go mmm… with every single mouthful.

A good dip is a must-have for any cheese platter, before you crack open that bottle of wine, allow some time to create this Hearty Winter Beetroot Chickpea Hummus, it is so easy and cheap to make (no tahini* required). Serve with Coupland’s Crackers with Sprouted Grain & Rosemary or Cracked Pepper & Rocksalt. Mmm… delish!

 

Hearty Winter Beetroot Chickpea Hummus

Total cooking time: 40 min

Ingredients

 

  • 1 (15 oz.) can of chickpeas, drained and rinsed
  • 1 cup of roasted red beetroot
  • 2 tbsp. extra virgin olive oil
  • Juice from 1/2 lemon
  • 1 garlic clove
  • 3/4 tsp. salt
  • 4 tbsp. iced water
  • 3/4 tsp. ground cumin
  • Coupland’s Crackers with Sprouted Grain & Rosemary or Cracked Pepper & Rocksalt.

 

Method

 

  1. Roast 1 medium sized red beetroot – to speed up the process, peel and cut into 1/2-inch wedges, toss with cooking oil and bake in a hot oven for 25 minutes at 204°C, until beets are tender. The high temperature will encourage maillard browning, which helps to create deeper flavours for each slice. Once cooked leave aside to cool (you can leave it in the fridge for a fast cooling).
  2. Place cold roasted red beetroot and chickpeas in a food processor and puree into a thick paste.
  3. Add olive oil, lemon juice, garlic, salt. Slowly drizzle in the ice-cold water. Blend for 2-3 minutes or until smooth and creamy. Add additional water to thin out to your taste preference.
  4. Add the ground cumin, pulse to combine.
  5. Taste and add more salt or lemon juice accordingly to your taste preference.
  6. Garnish with sesame seeds, if desired.
  7. Serve with Coupland’s Crackers with Sprouted Grain & Rosemary or Cracked Pepper & Rocksalt. Mmm… delish!

*Tahini: Tahini is a well-known ingredient in hummus, it is a smooth paste made from toasted, ground sesame seeds which has a light, nutty flavour.

Spoil yourself with these Stuffed French Toast Skewers

 

French toast is perfect for breakfast or brunch, it is simple and delicious, plus you will have so much fun making it.

Most of you have made French toast before, but have you tried French Toast on Skewers? Spoil yourself and the family with these Stuffed French Toast Skewers made with Coupland’s premium Our Country Harvest White Toast Bread, they are so simple to make, and surely it will brighten up anyone’s morning. Have kids in the family? Get them involved too!

 

Stuffed French Toast Skewers

Total cooking time: 30 min

 

Ingredients

 

  • 1 loaf of Coupland’s premium Our Country Harvest White Toast Bread
  • Strawberry jam
  • 1 tsp cinnamon powder
  • ½ cup creamy peanut butter
  • 1 cup sliced fresh strawberries (or bananas)
  • 4 large eggs
  • 3/4 cup of milk
  • 3/4 teaspoon vanilla extract
  • Maple syrup (or golden syrup)
  • Bamboo skewers
  • Additional maple syrup and sliced fresh strawberries (or bananas)
Method

 

  1. Spread jam over four slices of Coupland’s premium Our Country Harvest White Toast Bread, top with sliced strawberries, and sprinkle with cinnamon.
  2. Spread peanut butter over another four slices of bread, place them over the jammed slices to make jam peanut butter sandwiches stuffed with strawberries.
  3. Lightly grease a large flat pan, bring it to medium heat.
  4. In a shallow bowl, whisk eggs, milk, 3 tablespoon syrup and vanilla until blended.
  5. Dip the sandwiches in egg mixture, allowing each side to soak 10 seconds. Place sandwiches on heated flat pan, toast 3-4 minutes on each side or until golden brown.
  6. Transfer sandwiches to a cutting board, brush sandwiches with remaining syrup. Cut sandwiches into quarters.
  7. Prepare some bamboo skewers, alternately thread French toast quarters, halved strawberries. Serve with additional syrup and fruit.

Everyone loves meatballs!


Get your bibs out, it is meatballs and tomato sauce time. Everyone loves meatballs, but you’ll love them even better in a toasted Coupland’s Grain and Honey Roll. The perfect Saturday night dinner, so you can have a little bit of extra time relaxing.

This meatball sauce would be perfect on top of toasted Coupland’s Garlic Bread, and topped with delicious grilled cheese.

 

Serves 6

Ingredients

Meatballs

  • 250g beef mince
  • 250g pork mince
  • 1tsp garlic paste
  • 1 egg
  • 1tsp dijon mustard
  • Small handful coriander – chopped
  • 2tsp cumin powder
  • 1tsp ginger paste
  • 50g Coupland’s Breadcrumbs

Tomato Sauce

  • 500ml canned tomatoes
  • 4 fresh tomatoes – diced roughly
  • 1 onion – chopped
  • 2tbsp tomato paste
  • 1tsp dried oregano
  • 1 handful of basil – chopped

To Serve

  • Salt and pepper
  • Basil – chopped
  • 250g Anchor Sour Cream
  • 100g Mainland Smoked Cheddar Cheese
  • 5 Coupland’s Grain and Honey Rolls – halved and toasted

 

Method
  1. Mix all meatball ingredients together and form 16 even meatballs, refrigerate for 30 minutes.
  2. For the tomato sauce, saute’ the onions until soft, then add remaining sauce ingredients into a pot and simmer for 30 minutes until thickened and seasoned well.
  3. Shallow fry meatballs in a little oil until golden brown.
  4. Add the meatballs to the pot of sauce and continue to low simmer until cooked.
  5. To assemble the subs, place 2 slices of smoked cheddar cheese inside each long bun, top with 4 meatballs including plenty of sauce.
  6. Add a dollop of sour cream, and sprinkle with chopped basil.
  7. Serve hot.

Eton Mess Stack with fresh berries and soft, fluffy pikelets!

Try our take on an Eton Mess Stack that has a few surprises along the way. Get the kids involved in crafting this delicious treat – have fun and make something that looks and tastes incredible.

 

Serves 4 (3 pikelets per person)

Ingredients

 

  • 125g Cream Cheese
  • 125g Sour Cream
  • 4 x Coupland’s Meringue Nests
  • 1 lemon – zest
  • 1tbsp icing sugar
  • 12 (2 packs) Coupland’s Pikelets
  • 150g strawberries (fresh or frozen)
  • 150g blueberries (fresh or frozen)
  • 150g raspberries (fresh or frozen)
  • Mint leaves or baby basil to garnish

 

Method
  1. Whisk together the cream cheese, lemon zest, icing sugar and sour cream until smooth.
  2. Crush 3 or 4 strawberries and mix them through the cream cheese mix to create a marble effect.
  3. Start with 1 pikelet on a plate and spread with a little cream cheese mix.
  4. Add a few berries and sprigs of mint/basil before repeating the process twice, making a stack with the remaining two pikelets.
  5. For the top, spread the remaining cream cheese mix, adding chunks of meringue and berries before garnishing with mint/basil.

 

When berries are out of season, you could use slices of grilled stone fruit like nectarines, plums, and peaches.

Looking for a more exciting lunchbox filler for the kids or a healthy party food alternative? Try a pinwheel sandwich! They’re a fun and delicious way to mix things up and the kids can help make them with you.

 

Jazz up an ordinary lunchbox sandwich or kids party with these pinwheel sandwich recipes.

 

 

Salmon and Cucumber Pinwheel Sandwich

Ingredients 

Method

  • Cut the crusts off the bread. Use a rolling pin to flatten the bread down really well.
  • Spread each bread slice with a thin layer of cream cheese.
  • Top with two slices of smoked salmon per bread slice.
  • Roll the bread ‘sushi-style’ into two tight rolls. Slice into three pieces and push back together into a roll.
  • Roll each roll in a square of baking paper just a little larger than a slice of bread. Twist each end like a sweet so the rolls are secured and place into the fridge until you are ready to serve.
